BRL showcased international cuisines

One might not be aware that international cuisines are prepared for guests to enjoy inside the world’s oldest rainforest destination, the Borneo Rainforest Lodge (BRL), in the midst of Danum Valley.

The delightful menus were showcased during the 23rd Sabah Hospitality Fiesta 2023 at the Sabah International Convention Centre.

The BRL kitchen team, overseen by Human Resources Manager Bernard Majawai, was spearheaded by three chefs with vast experience in creating international flavours.

Executive Chef Azmi Affandi, with his flair in international cuisine, brings forward new takes and innovation in his dishes, capturing rich flavours on a different level.

With diverse experience ranging from Luxembourg to Malaysia, he generates fresh ideas aiming to exceed guests’ service experience, contributing to the positive growth in the F&B industry.

Joining the team is Sous Chef Jack Hailey Zoni, who has extensive experience promoting the rich and diverse flavours of Malaysian food.

Setting a goal that the authentic Malaysian flavour shouldn’t be lost in the creation of each dish, he elevates the modern interpretation of these flavours.

Completing the team is dedicated Chef de Partie Jairey Johanis, who invests his time and passion in both Western and Malaysian cuisine.

Constant refinement of dishes sets the standard for how our F&B industry is perceived.

This gives the local team a chance to showcase that the internationalisation of Malaysian food heritage opens opportunities to expand in the F&B industry.

Proving that innovation and a new twist will be the pathway for the hospitality industry to grow in the years to come.
